Our Tsakistes are traditionally flavoured with garlic, coriander and wild Greek Oregano which grows on the hillsides of Greek villages and is supremely fragrant. Each olive is cracked open so that it can absorb the flavours of the herbs added to it. This is a labour intensive process and done by hand in order to preserve the skin without bruising it. We have not strayed from the traditional recipe finding it to be perfect just as it is. In a light brine with a good part olive & sunflower oil.
